We select each batch of honey for its flavour, origin and connection to the environment behind it.

Nectar Trail — Stop 01 — The Coast

The landscape

Salt air, coastal wetlands and sunlit afternoons

Along the coastal edges of South East Queensland, the landscape has a relaxed, unhurried quality. Coastal wetlands stretch between the dunes and the treeline. Melaleucas line the creek banks, their white bark peeling softly in the sea breeze. The bees that forage here move between coastal gums and paperbark blossoms, drawing nectar from flowers shaped by salt air and sandy soil. The honey they produce carries that same easy, sunlit character.

Medium to dark amber, warm and inviting.
Primary flora
Coastal gums, melaleuca (paperbark), salt-tolerant eucalypts.
Flavour
Rich and earthy with warm butterscotch depth, a hint of salt and a long caramel finish. Bold enough to hold its own.

Cheese boards, yoghurt, toast, marinades, or drizzled over roasted vegetables.

The landscape

Fertile valleys, wildflowers and the Glass House Mountains

Hinterland Honey comes from the Sunshine Coast Hinterland, a region of volcanic peaks, fertile valleys, subtropical forest and wildflower meadows shaped by the seasons. Watched over by the ancient Glass House Mountains, this is the spiritual home of Hive & Harvest. Macadamia orchards blossom in winter, citrus trees perfume the hillsides in spring, and native wildflowers bloom throughout the year, shaping the distinctive floral character of this honey.

The Hinterland gives us more than honey. The wildflowers, citrus and mountain eucalypts inspired our Hinterland Harvest candle. The eucalyptus leaves, paperbark and pine cones a beekeeper burns in a smoker, and the memory of late nights camping in these mountains, became our Hinterland Campfire candle.

The landscape

Ancient eucalyptus forests and the open inland

Move inland and the landscape opens up. The trees grow taller and older. Ironbark, box trees, grey gum. The canopy reaches overhead in the forest gullies; elsewhere, the country stretches wide and flat under a vast Queensland sky.

Our Country Honey is harvested by John, a long-time beekeeping partner and mentor, who follows the seasons through Condamine, Texas and Miles, moving with the bloom across some of the most beautiful inland country in Queensland.

Ironbark, box trees, grey gum, native bush wildflowers.
Flavour
Beautifully balanced. Soft sweetness, gentle floral character and a clean bright finish.

Most of the world’s honey is clover or acacia. Reliable, familiar, good. But eucalyptus honey is something else entirely. It exists almost nowhere outside Australia. The depth, the warmth, the earthy complexity that sits beneath the sweetness. That is what the inland gives. A flavour the rest of the world simply does not have.

The landscape

A leafy city alive with subtropical blooms

Brisbane is one of the greenest cities in Australia. Jacaranda trees turn the streets purple every November. Flowering gums and paperbarks grow through parks and reserves. Bottlebrush, grevillea and lilly pilly fill suburban gardens. At the city’s edge, Mt Coot-tha and the Samford Valley bring the bush right to the urban boundary.

Hive & Harvest began here. First hives in Paddington, placed with a good friend and fellow beekeeper. Then Ashgrove, New Farm, Mt Coot-tha and Samford. Brisbane’s urban bees move between flowering gums and garden plants, native paperbarks and backyard citrus trees. Urban beekeeping keeps the city flowering. A relationship that benefits everyone.
