Beekeeper’s Notes: Caley’s Ironbark
This seasonal batch of County Honey is something truly special. Sourced by our long-time beekeeping partner and mentor John, it comes from the Caley’s Ironbark (Eucalyptus caleyi) growing out near Condamine in inland Queensland. The nectar from this tree produces an exceptionally pale honey with a soft sweetness, light floral notes and a clean, bright finish. It has a gentle depth that reflects the open country it comes from and is the lightest honey we have ever bottled.
John is a highly knowledgeable beekeeper who spends much of the year travelling through regions such as Texas, Condamine and Miles to follow the bloom. His experience and understanding of the landscape allow him to find rare and outstanding honeys, and this small batch is one of them.
A beautiful expression of Australia’s bushland gums and inland country, this honey is smooth, delicate and naturally refined.
