Beekeeper's Notes: Bushland Gums & Ironbark

This seasonal small batch of Country Honey comes from bushland gums and ironbark growing in inland Queensland near Condamine. The nectar from these native trees produces a beautifully balanced honey with soft sweetness, gentle floral character and a clean, bright finish.

Harvested by our long-time beekeeping partner and mentor John, this honey reflects the open country he follows each season. Travelling through regions such as Texas, Condamine and Miles, John moves with the bloom, working closely with the landscape to produce distinctive Australian honeys shaped by native flora.

Tasting notes

  • Colour — Medium to dark amber, warm and substantial.
  • Primary flora — Ironbark, box trees, grey gum, native bush wildflowers.
  • Flavour — Beautifully balanced. Soft sweetness, gentle floral character and a clean bright finish.
  • Best with — Porridge, baking, coffee, roasted nuts. Versatile but always special on the table.
