Beekeeper's Notes: Coastal Gums and Melaleuca
Our Seaside Honey is collected from hives kept near Queensland's coastal wetlands, where melaleucas and salt-tolerant gums bloom through the warmer months. The nectar from these trees produces a honey with a warm, buttery sweetness and soft floral notes, finishing with a delicate caramel character. It has a relaxed, sunlit quality that feels reminiscent of sea breezes and long summer afternoons.
This batch comes from an independent beekeeper who is at the forefront of varroa mite research and has been working to help prepare the beekeeping industry for the challenges ahead. Her knowledge and commitment to bee health shape the care she brings to every harvest, and we are grateful to share honey sourced from her hives.
Tasting notes
- Colour — Medium to dark amber, warm and inviting.
- Primary flora — Coastal gums, melaleuca (paperbark), salt-tolerant eucalypts.
- Flavour — Rich and earthy with warm butterscotch depth, a hint of salt and a long caramel finish. Bold enough to hold its own.
