Beekeeper’s Notes: Seaside Honey in the Sunshine Jar

Sunshine Honey is our generous everyday jar: 1kg of raw Australian honey, chosen from whichever Queensland harvest is flowing best at the time.

This batch features our Seaside Honey, gathered from coastal gums and melaleucas. It has a rich, mellow sweetness with gentle earthy notes and a smooth coastal character. It is the kind of honey that works beautifully every day: on toast, in tea, over yoghurt, or by the spoonful.

We named it for both meanings: the Sunshine State, and the Sunshine Coast where so much of our honey story begins.

We work with a small group of trusted Queensland beekeepers, choosing each season’s Sunshine jar from whichever harvest is most abundant and tasting its best. It’s a way of honouring how honey actually works. The bees follow the flow, and the flow shifts with the seasons.

Where our Queensland Nectar Trail jars each capture a single region in a 350g format, Sunshine is the bigger, simpler everyday jar. Same raw Australian honey, same care, same trusted beekeepers. A generous size for daily use, featuring a rotating seasonal source rather than a fixed regional expression.
