Beekeeper's Notes: Coastal Gums and Melaleuca

Sunshine Honey is our generous everyday jar: a full kilogram of raw Australian honey, filled from our most recent Queensland harvest.

This batch comes from the same source as our Seaside Honey, hives kept near Queensland's coastal wetlands, where melaleucas (paperbarks) and salt-tolerant gums flower through the warmer months. It's collected by an independent beekeeper who is at the forefront of varroa mite research, and her care for her bees shows in every harvest.

Expect a medium to dark amber honey that's rich and earthy, with warm butterscotch depth, a hint of salt and a long caramel finish. It's bold enough to hold its own on a cheese board or in a marinade, and just as good on toast, over yoghurt or stirred through tea.

We named it for the Sunshine State, and we fill each season's Sunshine jar from our most recent harvest, whichever region we are working with at the time. It is a way of honouring how honey actually works. The bees follow the flow, and the flow shifts with the seasons.

Where our Queensland Nectar Trail jars each capture a single region in a 350g format, Sunshine is the bigger, everyday jar. Same raw Australian honey, same care, same trusted beekeepers, in a generous size with a rotating seasonal source rather than a fixed regional expression.
