Beekeeper's Notes: Forest Red Gum and Mountain Wildflower
Sunshine Honey is our generous everyday jar: a full kilogram of raw Australian honey, filled from our most recent Queensland harvest.
This July's batch is a mountain eucalyptus and wildflower honey from the Sunshine Coast Hinterland, where fertile valleys and subtropical forests sit beneath the Glass House Mountains. The dominant floral source is forest red gum, known here as Queensland blue gum, flowering alongside a scatter of seasonal wildflower.
The result is beautifully well rounded. Warm and full without ever turning heavy, with the clean eucalyptus backbone that forest red gum gives and a soft floral lift sitting behind it. This is an easy honey to love and an easier one to finish: on toast, stirred through tea, spooned over yoghurt, or straight from the jar when nobody is watching.
We named it for the Sunshine State, and we fill each season's Sunshine jar from our most recent harvest, whichever region we are working with at the time. It is a way of honouring how honey actually works. The bees follow the flow, and the flow shifts with the seasons.
Where our Queensland Nectar Trail jars each capture a single region in a 350g format, Sunshine is the bigger, everyday jar. Same raw Australian honey, same care, same trusted beekeepers, in a generous size with a rotating seasonal source rather than a fixed regional expression.
